Honeydew

Honeydew Recipe

The honeydew was first introduced to China by Henry A. Wallace in the 1940s. Wallace was Vice President of the United States under Franklin Delano Roosevelt, and was the founder of Pioneer Hi-Bred, the largest U.S. producer of hybrid seeds for agriculture. The honeydew is still known in parts of China as the “Wallace melon”.

Ingredients:

  • 1 1/2 ounces melon liqueur
  • 1 1/2 ounces lemon juice
  • 3/4 ounce simple syrup
  • 1/2 teaspoon sugar
  • 3 ounces Champagne

Directions:

  1. Shake the melon liqueur, lemon juice, simple syrup and sugar in a cocktail shaker with ice.
  2. Strain the contents of the shaker into an ice-filled highball or Collins glass.
  3. Add the Champagne, gently stir, and serve.
